Big Production

Last night I worked 6pm to midnight at the kitchen. Huge production for a catering even today. My first task was to grate fontina and mix it into a tray of already cooked mushroom risotto. And then: make little balls out of the risotto. This taks took forever. I was a quarter and 1.5 hours into the task when I finally asked for help. Then 4 of us cranked out the little balls. I might never eat risotto again after this... NOT. At 8:30 everybody (about 20 total) joined in the sandwich production... by midnight we'd cranked out over 800 sandwiches. I was exhausted by then.
