Lemon Merengue Cupcakes

Continuing with the cupcake craze, I picked a lemon merengue recipe for a dinner party on Saturday. Cupcakes sank in the middle, which made them perfect for filling with the lemon curd. SK said they were very good, but cake lady cake is still the best cake and definitely consistent in baking.
