Mini Lemon Cupcakes with Whipped Frosting
Recipe: Magnolia's Bakery Vanilla Cupcakes with added lemon juice and zest.
Occasion: Easter Dinner Dessert.
Notes: I halved the recipe for the vanilla cupcakes, but on the first batch I forgot to pour only half the milk. Needless to say I had to make the batter twice. I used soy milk instead of regular cow milk and non-dairy pastry cream frosting for the L.I. in the crowd. I didn't have enough mini papercups, so I made a couple of big cupcakes for tasting. The cupcakes turned out very light and nice. I would add more lemon zest to the batter next time.
