Carrot Cake

Its been a while since Ive posted anything here. Its because its been ages since Ive baked anything worthy to blog about.
Here we have my favorite carrot cake recipe. Ive made it several times but Ive made adjustmenst in the book so I know for next time. Like in MY oven it take 45 min to bake instead of 30 min. Also the cream cheese frosting has no butter. We added pirulin cookies filled with vanilla cream. They look nice but also it hides the uneven sides of the cake. The only way to make it smooth all over was to slather the thing with MORE cream cheese and that would be too much. Very Happy with the results!
